Preheat your oven to 150°C (300°F). Pat the beef brisket dry with paper towels and season generously with salt and pepper on all sides.
Heat the olive oil in a large oven-safe skillet or Dutch oven over medium-high heat. Sear the brisket for 2-3 minutes on each side until browned.
Remove the skillet from heat. Brush 40g of barbecue sauce over the brisket, cover tightly with a lid or foil, and transfer to the oven. Cook for
5 to 3 hours, or until the brisket is tender and can be easily shredded with a fork.
Remove the brisket from the oven and let it rest for 10 minutes. Shred the brisket using two forks and toss with the remaining 40g of barbecue sauce.
Slice the milk buns in half and lightly toast them in a dry skillet or under a broiler until golden.
To assemble each burger, place a generous portion of shredded BBQ brisket on the bottom half of each milk bun. Top with 20g coleslaw and 2 slices of pickles.
Place the top half of the bun on each burger. Serve immediately and enjoy your BBQ brisket burger with milk bun!
