1Heat the olive oil in a large pot or tagine over medium heat.
Add the chicken thighs and brown them on all sides. Remove the chicken and set aside.
In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent.
Add the ground cumin, ground ginger, ground cinnamon, paprika, and turmeric. Stir well to coat the onions and garlic with the spices.
Return the chicken thighs to the pot. Add the chicken broth, diced tomatoes, dried apricots, and green olives.
Season with salt and pepper to taste.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 45 minutes, or until the chicken is cooked through and tender.
Serve the chicken tagine hot, garnished with fresh herbs if desired.
