2Boil the eggs in a pot of water for about 10 minutes until they are hard-boiled. Once done, peel the eggs and set them aside.
Heat the oil in a pan over medium heat. Add the cumin seeds and let them splutter.
Add the chopped onions to the pan and sauté until they turn golden brown.
Add the ginger-garlic paste and sauté for another minute until the raw smell disappears.
Add the chopped tomatoes and cook until they become soft and the oil starts to separate.
Add the red chili powder, garam masala, and salt. Mix well and cook for another 2 minutes.
Add the green chilies and stir them into the mixture.
Chop the boiled eggs into small pieces and add them to the pan. Mix everything well to ensure the eggs are coated with the masala.
Cook for another 5 minutes, stirring occasionally.
Garnish with fresh coriander leaves and serve hot with rice or bread.
