1Rinse the yellow split lentils (toor dal) thoroughly under running water.
In a large pot, add the rinsed lentils and 4 cups of water. Bring to a boil.
Once boiling, reduce the heat to a simmer and add the turmeric powder. Cook until the lentils are soft and fully cooked, about 20-25 minutes.
In a separate pan, heat the ghee over medium heat. Add the cumin seeds and mustard seeds. Let them splutter.
Add the finely chopped onion and slit green chilies to the pan. Sauté until the onions are golden brown.
Add the red chili powder and sauté for another minute.
Add the chopped mango to the pan and cook for 3-4 minutes until the mango softens.
Pour the mango mixture into the cooked lentils. Stir well to combine.
Add salt to taste and let the dal simmer for another 5-10 minutes to allow the flavors to meld.
Garnish with chopped cilantro before serving.
Serve hot with rice or roti.
