Remove the crusts from the white bread slices and tear them into small pieces.
Heat 1 tbsp ghee in a non-stick pan over medium heat. Add the cashew nuts and roast until golden brown. Remove and set aside.
In the same pan, add the bread pieces and roast for 2-3 minutes until slightly crisp.
Pour in 400 ml low-fat milk and cook, stirring continuously, until the bread absorbs the milk and becomes soft.
Add 3 tbsp sugar and mix well. Continue to cook until the mixture thickens and leaves the sides of the pan.
Add the roasted cashew nuts and 1 tsp cardamom powder. Mix thoroughly.
Cook for another 2-3 minutes, stirring constantly, until the halwa reaches your desired consistency.
Serve warm, garnished with a few extra cashew nuts if desired.
