Preheat your grill or grill pan to medium-high heat.

Pat the sea scallops dry with paper towels. In a bowl, toss the scallops with 1 tablespoon of olive oil, sea salt, and black pepper until evenly coated.

Thread the scallops, red bell pepper chunks, yellow bell pepper chunks, and red onion wedges alternately onto skewers.

In a small saucepan, combine the Asti Spumanti sparkling wine, honey, and lemon juice. Bring to a gentle simmer over medium heat and cook for 3-4 minutes, stirring occasionally, until slightly thickened. Remove from heat and set aside.
