Preheat the oven to 180°C (350°F). Finely mince the garlic and remove the thyme leaves from their stems.
Place the roasted turkey breast in a baking dish. Rub it with half of the olive oil, the fresh thyme, one-third of the minced garlic, 2 g of salt, and 1 g of black pepper.
Cover the baking dish loosely with foil and warm the turkey in the oven for 20–25 minutes, or until its center reaches 74°C (165°F). Remove the foil for the final 5 minutes. Rest the turkey for 5–10 minutes before slicing.
While the turkey warms, peel the potatoes if desired and cut them into evenly sized chunks. Put them in a saucepan, cover with cold water, and add 2 g of salt.
Bring the potatoes to a boil, then reduce the heat and simmer for 15–20 minutes, or until easily pierced with a fork. Drain thoroughly and return them to the warm saucepan.
Gently heat the whole milk and butter until the butter melts. Add this mixture and half of the remaining garlic to the potatoes. Mash until smooth, then season with 1 g of salt and
5 g of black pepper.
Trim the green beans. Heat the remaining olive oil in a large skillet over medium-high heat. Add the beans and cook for 5–7 minutes, stirring occasionally, until crisp-tender.
Add the remaining garlic, 1 g of salt, and
5 g of black pepper to the green beans. Cook for another 1–2 minutes, stirring frequently, until the garlic is fragrant.
Slice the rested turkey breast and serve it with the garlic mashed potatoes and sautéed green beans.
