1Preheat your smoker to 225°F (107°C).
Rinse the turkey under cold water and pat it dry with paper towels.
In a small bowl, mix together the olive oil, kosher salt, black pepper, paprika, garlic powder, onion powder, dried thyme, and dried rosemary to create a seasoning rub.
Rub the seasoning mixture all over the turkey, making sure to cover both the outside and inside of the bird.
Place the turkey on the smoker grate, breast side up.
Smoke the turkey for approximately 30 minutes per pound, or until the internal temperature reaches 165°F (74°C) in the thickest part of the breast and thigh.
Remove the turkey from the smoker and let it rest for at least 20 minutes before carving.
Carve the turkey and serve.
