1Crack the 8 large eggs into a bowl and whisk them well. Set aside.
Heat 1 tablespoon of vegetable oil in a large non-stick pan or wok over medium-high heat.
Add the minced garlic (2 cloves) and sauté for about 30 seconds until fragrant.
Add the chopped onions (1 cup) and chopped bell peppers (1 cup) to the pan. Stir-fry for 2-3 minutes until they start to soften.
Pour the whisked eggs into the pan. Allow them to set slightly, then gently scramble and stir until the eggs are just cooked but still soft.
Add 2 tablespoons soy sauce, 2 tablespoons red chilly sauce, 1 tablespoon green chilli sauce, and 2 tablespoons ketchup to the pan. Sprinkle in 1 teaspoon black pepper.
Stir everything together well, ensuring the eggs and vegetables are evenly coated with the sauces.
Cook for another 1-2 minutes, stirring frequently, until everything is heated through and well combined.
Remove from heat and garnish with 1 tablespoon chopped spring onions.
Serve hot as a main dish or with steamed rice or noodles.
