1Rinse the toor dal thoroughly under running water until the water runs clear.
In a pressure cooker, add the rinsed toor dal, 4 cups of water, and 1 teaspoon of turmeric powder. Cook for 3-4 whistles or until the dal is soft and mushy.
Once the pressure releases naturally, open the cooker and mash the dal with a ladle or a whisk until smooth.
In a separate pan, heat 1 tablespoon of oil over medium heat. Add 1 teaspoon of mustard seeds and let them splutter.
Add 1 teaspoon of cumin seeds and
5 teaspoon of asafoetida. Sauté for a few seconds until aromatic.
Add the mashed dal to the pan and mix well.
Add 1 teaspoon of red chili powder, salt to taste, and 1 tablespoon of jaggery. Stir to combine.
Let the dal simmer for 5-7 minutes, stirring occasionally.
Add 2 tablespoons of lemon juice and mix well.
Garnish with 2 tablespoons of chopped coriander leaves.
Serve hot with rice or roti.
