In a saucepan, combine 2 cups of milk and 1 cup of coconut milk.
Add 1/2 cup of sugar to the mixture and stir well.
Place the saucepan over medium heat and bring the mixture to a gentle boil, stirring occasionally.
Once the mixture starts to boil, reduce the heat to low and let it simmer for about 10-15 minutes, stirring occasionally to prevent it from sticking to the bottom.
Add 1/2 teaspoon of cardamom powder to the mixture and stir well.
In a small bowl, mix 1 tablespoon of oil with a little bit of the hot milk mixture to temper it, then add it back to the saucepan and stir well.
Continue to cook the mixture on low heat for another 5 minutes, stirring occasionally.
Remove the saucepan from the heat and let the pudding cool slightly.
Pour the pudding into serving bowls or molds and let it cool to room temperature.
Refrigerate the pudding for at least 2 hours or until it is set.
