Ingredients
4 Servings
- Peeled daikon radish, grated700 g
- Rice flour220 g
- Dried shiitake mushrooms, rehydrated and chopped25 g
- Chinese sausage, diced100 g
- Dried shrimp, soaked and chopped35 g
- Vegetable oil20 g
- Scallions, sliced30 g
- Light soy sauce30 ml
- Water300 ml
Instructions
- 1
Lightly grease a heatproof 20 cm round or square pan with a small portion of the vegetable oil. Prepare a steamer large enough to hold the pan.
- 2
Heat the remaining vegetable oil in a large skillet or pot over medium heat. Add the diced Chinese sausage, chopped dried shrimp, and chopped shiitake mushrooms. Cook for 3–4 minutes, stirring, until fragrant.
- 3
Add the grated daikon, light soy sauce, and 200 ml of the water. Cook over medium heat for 8–10 minutes, stirring occasionally, until the daikon softens and releases its juices.
- 4
In a large bowl, whisk the rice flour with the remaining 100 ml water until smooth and free of lumps.
- 5
Gradually add the hot daikon mixture to the rice-flour slurry, stirring continuously. Mix in most of the sliced scallions, reserving a small amount for garnish. The batter should be thick and evenly combined.
- 6
Transfer the mixture to the greased pan and smooth the surface. Place the pan in the prepared steamer, cover, and steam over medium-high heat for 50–60 minutes, or until the cake is firm and a skewer inserted into the center comes out without wet batter.
- 7
Remove the cake from the steamer and garnish with the reserved scallions. Let it cool in the pan for at least 30 minutes so it can set properly.
