Ingredients

Rinse and soak the dried red kidney beans in water overnight or for at least 8 hours.

Drain the soaked beans and rinse them again. Add the beans to a pressure cooker with 2 cups of water and a pinch of salt. Cook for about 15-20 minutes or until the beans are soft.

In a large pan, heat the vegetable oil over medium heat. Add the cumin seeds and let them splutter.

Add the finely chopped onion and sauté until golden brown.

Add the ginger-garlic paste and sauté for another 2 minutes.

Add the pureed tomatoes and cook until the oil starts to separate from the mixture.

Add the coriander powder, garam masala, red chili powder, turmeric powder, and salt to taste. Mix well and cook for another 2-3 minutes.

Add the cooked kidney beans along with the water they were cooked in. Stir well and let it simmer for 10-15 minutes, allowing the flavors to meld together.
