Asian-Style Pork Meatloaf with Ginger Soy Glaze, Stir-Fried Snow Peas, and Sesame Potatoes

   Preheat your oven to 180°C (350°F). Line a loaf pan with parchment paper or lightly grease it.

   In a large bowl, combine the ground pork, egg, 1 tablespoon soy sauce, grated ginger, minced garlic, and chopped green onions. Mix until just combined.

   Transfer the pork mixture into the prepared loaf pan and shape it into a loaf. Bake for 35-40 minutes, or until the meatloaf is cooked through and the juices run clear.

   While the meatloaf is baking, prepare the ginger soy glaze: In a small saucepan, combine the remaining 1 tablespoon soy sauce and brown sugar. Heat over low heat, stirring until the sugar dissolves. Set aside.

   Wash and cut the potatoes into bite-sized pieces. Place them in a pot of salted water, bring to a boil, and cook for 10-12 minutes or until tender. Drain well.

   In a large skillet, heat the sesame oil over medium heat. Add the cooked potatoes and sauté for 3-4 minutes until lightly golden and fragrant. Remove from heat and set aside.

   In the same skillet, add the vegetable oil and heat over medium-high heat. Add the snow peas and stir-fry for 2-3 minutes until bright green and just tender. Season with a pinch of salt if desired.
