In a large bowl, combine the grated zucchini, all-purpose flour, grated Parmesan cheese, egg, minced garlic, salt, and pepper. Mix well until all ingredients are thoroughly combined.
Heat the olive oil in a large skillet over medium heat.
Scoop about 2 tablespoons of the zucchini mixture and drop it into the skillet. Flatten it slightly with the back of the spoon to form a fritter. Repeat with the remaining mixture, making sure not to overcrowd the skillet.
Cook the fritters for about 2-3 minutes on each side, or until they are golden brown and crispy.
Remove the fritters from the skillet and place them on a paper towel-lined plate to drain any excess oil.
Serve the zucchini fritters warm, with your favorite dipping sauce if desired.
