In a large bowl, combine the shredded cooked chicken, chili powder, cumin, salt, and black pepper.
Heat 1 tbsp of olive oil in a large skillet over medium heat.
Add the diced bell peppers and diced onions to the skillet and sauté until they are tender, about 5 minutes.
Add the seasoned chicken to the skillet and cook for an additional 2-3 minutes until heated through.
Remove the chicken and vegetable mixture from the skillet and set aside.
Wipe the skillet clean and place it back on the stove over medium heat.
Place one flour tortilla in the skillet and sprinkle with 1/4 cup of shredded cheddar cheese and 1/4 cup of shredded Monterey Jack cheese.
Add a portion of the chicken and vegetable mixture on top of the cheese.
Sprinkle with some chopped cilantro.
Place another flour tortilla on top and press down gently.
Cook for 2-3 minutes on each side, or until the tortillas are golden brown and the cheese is melted.
Repeat with the remaining tortillas and filling.
Cut the quesadillas into wedges and serve warm.
