Season the roast generously with coarse salt and black pepper on all sides.
Peel and mince the garlic cloves, then rub them onto the surface of the beef.
Place the beef roast on a wire rack in a roasting pan.
Insert a meat thermometer into the thickest part of the roast.
Roast the beef in the preheated oven until the internal temperature reaches 130°F (54°C) for medium-rare, about 2 to 3 hours.
Once the desired temperature is reached, remove the roast from the oven and let it rest for at least 20 minutes before slicing.
