Preparación
- 1
Place the peeled and cubed potatoes in a large pot and cover them with cold water by about 1 inch.
- 2
Bring the water to a boil over medium-high heat. Reduce the heat and simmer the potatoes for 10–15 minutes, or until they are fork-tender but not falling apart.
- 3
Drain the potatoes thoroughly and spread them on a tray or place them in a large bowl. Let them cool for about 15 minutes.
- 4
In a separate large mixing bowl, whisk together the mayonnaise, yellow mustard, white vinegar, granulated sugar, salt, black pepper, and paprika until smooth.
- 5
Add the cooled potatoes, chopped hard-boiled eggs, diced celery, diced yellow onion, and chopped dill pickles to the dressing.
- 6
Gently fold the ingredients together until the potatoes are evenly coated, taking care not to mash them excessively.
- 7
Cover the potato salad and refrigerate it for at least 2 hours to allow the flavors to blend.
- 8
Gently stir the salad before serving. Serve chilled.
