In a large mixing bowl, combine 2 cups of suji and 1 cup of yogurt. Mix well to form a smooth batter.
Gradually add 1/2 cup of water to the batter, stirring continuously to avoid lumps. The batter should be of pouring consistency.
Add 1 teaspoon of salt to the batter and mix well. Let it rest for about 15-20 minutes.
Heat 1 tablespoon of oil in a pan over medium heat. Add 1 teaspoon of mustard seeds and let them splutter.
Add 1 chopped green chili, 1/2 teaspoon of cumin seeds, and 1/4 teaspoon of turmeric powder to the pan. Sauté for a minute.
Pour the tempering into the batter and mix well.
Heat a non-stick dosa pan or tawa over medium heat. Grease it lightly with oil.
Pour a ladleful of batter onto the center of the pan and spread it in a circular motion to form a thin dosa.
Drizzle a few drops of oil around the edges of the dosa. Cook until the edges start to lift and the bottom turns golden brown.
Carefully flip the dosa and cook the other side for a minute.
Remove the dosa from the pan and repeat the process with the remaining batter.
Serve hot with chutney or sambar, garnished with 1/4 cup of chopped coriander leaves.
