Heat the olive oil in a large pan over medium heat.

Add the diced onions, minced garlic, and minced ginger to the pan. Sauté until the onions are translucent.

Add the diced carrots and jalapeno pepper to the pan. Cook for about 5 minutes until the carrots are tender.

Stir in the garam masala, cumin, turmeric, coriander, and salt. Cook for another 2 minutes to toast the spices.

Add the mashed potatoes and cooked peas to the pan. Mix well to combine all the ingredients. Cook for another 5 minutes, stirring occasionally. Remove from heat and let the filling cool.

Lay out one sheet of phyllo dough and brush it lightly with olive oil. Place another sheet on top and brush with olive oil. Repeat until you have 4 layers.
