Rinse the basmati rice thoroughly in water 2-3 times and soak it in water for 20 minutes. Drain and set aside.

Soak the soya chunks in hot water for 10 minutes. Squeeze out excess water and set aside.

Heat the vegetable oil in a large pan over medium heat. Add cumin seeds and let them splutter.

Add the chopped onions and sauté until they turn golden brown.

Add the ginger garlic paste and sauté for 1 minute until the raw smell disappears.

Add the chopped green chilies and tomatoes. Cook until the tomatoes turn soft and mushy.

Add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook for 2 minutes.

Add the soaked and squeezed soya chunks. Mix and cook for 3-4 minutes so the chunks absorb the flavors.

Add the drained basmati rice and gently mix with the masala.

Pour in 400ml water and bring to a boil. Reduce the heat to low, cover the pan, and cook for 12-15 minutes or until the rice is cooked and water is absorbed.
