1Press the tofu to remove excess water and cut it into 1-inch cubes.
Slice the onion, red bell pepper, and green bell pepper into thin strips.
Mince the garlic and grate the ginger.
Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat.
Add the tofu cubes and cook until golden brown on all sides, about 5-7 minutes. Remove the tofu from the skillet and set aside.
In the same skillet, add the remaining 1 tablespoon of olive oil.
Add the sliced onion, red bell pepper, and green bell pepper. Stir-fry for 3-4 minutes until they start to soften.
Add the minced garlic and grated ginger to the skillet and stir-fry for another 1-2 minutes.
Return the tofu to the skillet and add the soy sauce, chilli paste, salt, and black pepper. Stir well to combine.
Pour in the vegetable broth and bring the mixture to a simmer. Cook for an additional 3-4 minutes until the sauce thickens slightly.
Serve the hot chilli tofu stir-fry over rice or noodles, and enjoy!
