Add the chopped red onion and minced garlic to the skillet. Sauté for 2-3 minutes until the onion is softened and fragrant.
Add the cherry tomatoes to the skillet and cook for another 3-4 minutes, until the tomatoes begin to soften and release their juices.
Pour in the fresh lemon juice and stir well to coat all the ingredients. Cook for an additional 2 minutes, allowing the flavors to meld.
Taste and adjust seasoning if needed. Remove from heat.
