Place the cooked white rice in a large mixing bowl and break up any clumps with a fork. Allow it to cool completely if it is still warm.
Add the finely diced onion, minced garlic, gram flour, chilli powder, turmeric, chopped curry leaves, and salt to the rice. Mix until evenly distributed.

Heat about one-third of the vegetable oil in a large non-stick frying pan over medium heat.
Add a single layer of patties without overcrowding the pan. Cook for 3–4 minutes on each side, or until deep golden, crisp, and cooked through in the center.
Transfer the cooked patties to a plate lined with paper towel. Repeat with the remaining patties, adding more of the measured oil between batches as needed.
Serve the crispy chilli egg and rice patties hot.
