Prepare all the ingredients: thinly slice the cooked beef rolls and onion, mince the garlic, dice the tomato, grate the carrot and cheddar, and beat the eggs in a bowl.
Melt half of the butter in a large frying pan over medium heat. Add the sliced onion and cook for 3–4 minutes, until softened.
Add the minced garlic and cook for 30 seconds. Stir in the diced tomato and grated carrot, then cook for 5–7 minutes, stirring occasionally, until the vegetables soften and most of the excess liquid evaporates.
Add the sliced beef and sweet chilli sauce. Stir well and cook for 2–3 minutes, until the beef is heated through and coated. Transfer the mixture to a bowl.
Pour the beaten eggs into the same pan. Cook over medium-low heat, stirring gently, until softly scrambled but no longer runny. Remove from the heat.
Lay the tortillas on a clean work surface. Spread the beef and vegetable mixture over one half of each tortilla, then divide the scrambled eggs and grated cheddar evenly among them.
Fold the unfilled half of each tortilla over the filling and press gently to close.
Melt the remaining butter in a clean frying pan over medium-low heat. Cook the quesadillas in batches for 2–3 minutes per side, pressing gently with a spatula, until golden and crisp and the cheese has melted.
Rest the quesadillas for 1 minute, then slice into wedges and serve warm.
