1Heat the oil in a large pot over medium heat.
Add the chopped onions and sauté until they turn golden brown.
Add the ginger garlic paste and cook for another 2 minutes.
Add the mutton pieces and cook until they are browned on all sides.
Add the chopped tomatoes, red chili powder, turmeric powder, and salt. Cook until the tomatoes are soft and the oil starts to separate from the mixture.
Add the potatoes and mix well.
Add enough water to cover the mutton and potatoes. Bring to a boil, then reduce the heat to low and cover the pot. Let it simmer until the mutton and potatoes are tender, about 45 minutes to 1 hour.
Stir in the garam masala and cook for another 5 minutes.
Garnish with fresh coriander before serving.
Serve hot with rice or naan.
