Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta.
While the pasta is cooking, halve the cherry tomatoes and finely chop the garlic cloves.
In a large skillet, melt the butter over medium heat. Add the chopped garlic and sauté for about 1 minute until fragrant.
Add the halved cherry tomatoes to the skillet. Cook for 5-7 minutes, stirring occasionally, until the tomatoes are soft and start to release their juices.
Pour in the fresh cream and stir well. Let the sauce simmer for 2-3 minutes until slightly thickened.
Add the drained pasta to the skillet and toss to coat in the creamy tomato sauce. If the sauce is too thick, add a splash of reserved pasta water to reach your desired consistency.
Stir in the grated parmesan cheese and mix until melted and creamy.
Season with salt and pepper to taste. Remove from heat.
Finely chop the coriander and sprinkle it over the pasta before serving.
Serve immediately, garnished with extra parmesan if desired.
