In a bowl, mix the all-purpose flour with a pinch of salt and 1 tablespoon of oil. Add water gradually and knead into a smooth dough. Cover and let it rest for 30 minutes.
In a pan, heat 1 tablespoon of oil and add cumin seeds. Once they splutter, add ginger paste and sauté for a minute.
Add the green peas to the pan and cook until they are soft. Mash them slightly with a spoon.
Add coriander powder, chili powder, and salt to the peas. Mix well and cook for another 2-3 minutes. Let the mixture cool.
Divide the dough into small balls. Flatten each ball and place a spoonful of the pea mixture in the center. Seal the edges and shape into a ball again.
Roll each filled ball gently into a small disc.
Heat oil in a deep frying pan. Once hot, fry the kachoris until they are golden brown and crispy.
Remove from oil and drain on paper towels. Serve hot with chutney or yogurt.
