Pour in the chicken stock and return the browned chicken to the pot. Bring to a boil, then simmer uncovered for 8–10 minutes to concentrate the sauce and begin cooking the chicken.
Stir the drained rice into the sauce, making sure it is evenly distributed. Bring the mixture back to a gentle simmer.
Cover the pot tightly, reduce the heat to low, and cook for 25–30 minutes. Stir gently once halfway through to prevent sticking. If the rice is still firm near the end, cover again and cook for an additional 5 minutes.
Confirm that the chicken has reached an internal temperature of 74°C and that the rice is tender. Remove the bay leaf, turn off the heat, and leave the pot covered for 10 minutes.
Fluff the chicken jollof rice gently with a fork, distribute the chicken evenly, and serve hot.
