1Heat the ghee in a heavy-bottomed pan over medium heat.
Add the grated beetroot and carrot to the pan and sauté for about 5-7 minutes until they soften.
Pour in the milk and bring the mixture to a boil. Reduce the heat and let it simmer, stirring occasionally, until the milk is absorbed and the mixture thickens.
Add the sugar and continue to cook, stirring frequently, until the sugar dissolves and the halwa thickens further.
Sprinkle the cardamom powder over the halwa and mix well.
Cook for another 2-3 minutes, ensuring the mixture is well combined and reaches the desired consistency.
Remove from heat and let it cool slightly before serving.
Serve warm, garnished with nuts or raisins if desired.
