1Wash and slice the yellow squashes into thin rounds.
Peel and chop the onion finely.
Mince the garlic cloves.
In a large pot, heat the olive oil over medium heat.
Add the chopped onion and minced garlic to the pot and sauté until the onion becomes translucent, about 5 minutes.
Add the sliced yellow squash to the pot and cook for another 5 minutes, stirring occasionally.
Pour in the vegetable broth and bring the mixture to a boil.
Reduce the heat to low and let it simmer for about 15 minutes, or until the squash is tender.
Add the turmeric, salt, and pepper to the pot and stir well.
Use an immersion blender to puree the soup until smooth. Alternatively, you can transfer the soup to a blender in batches and blend until smooth.
Taste and adjust the seasoning if necessary.
