1Heat the olive oil in a large pot over medium-high heat.
Season the oxtail with salt and pepper, then brown on all sides in the pot. Remove and set aside.
In the same pot, add the chopped onion, sliced carrots, and sliced celery. Cook until the vegetables are softened, about 5-7 minutes.
Add the minced garlic and cook for another minute.
Stir in the tomato paste and cook for 2 minutes.
Pour in the red wine, scraping up any browned bits from the bottom of the pot. Let it simmer for 5 minutes.
Return the oxtail to the pot and add the beef broth, thyme, and bay leaf.
Bring the stew to a boil, then reduce the heat to low. Cover and simmer for
5 to 3 hours, or until the oxtail is tender and the meat is falling off the bone.
Remove the bay leaf and adjust seasoning with salt and pepper to taste.
