    Wash and roughly chop the Malabar spinach leaves. Peel and slice the carrot into thin julienne strips. Peel and thinly slice the onion. Dice the tomatoes. Peel and finely chop the garlic. Slice the green chilli.

    Crack the eggs into a bowl, add a pinch of salt, and beat them well.

    Heat the olive oil in a large non-stick pan or wok over medium heat.

    Add the sliced onions and sauté for 2 minutes until they start to soften.

    Add the chopped garlic and green chilli, and sauté for another 1 minute until fragrant.
