Istruzioni
- 1
Heat the vegetable oil in a large, heavy-bottomed pot over medium heat.
- 2
Add the sliced onions and cook for 8–10 minutes, stirring regularly, until soft and golden brown.
- 3
Add the minced garlic, grated ginger, and chopped green chillies. Cook for 1–2 minutes until fragrant.
- 4
Stir in the Durban curry powder, ground cumin, and ground turmeric. Cook for about 1 minute, stirring continuously to prevent the spices from burning.
- 5
Add the cubed mutton and salt. Cook for 8–10 minutes, turning the meat frequently, until it is browned and evenly coated with the spices.
- 6
Add the chopped tomatoes and cook for 8–10 minutes, stirring occasionally, until they soften and form a thick sauce.
- 7
Pour in 400 ml of the water and bring the curry to a boil. Reduce the heat to low, cover, and simmer for 60–75 minutes, or until the mutton is nearly tender. Stir occasionally and add some of the remaining water if the sauce becomes too dry.
- 8
Add the quartered potatoes and enough of the remaining water to maintain a thick gravy. Cover and simmer for another 25–30 minutes, or until both the potatoes and mutton are tender.
