Preheat the oven to 190°C (375°F). Lightly coat a loaf pan or rimmed baking tray with a small amount of the olive oil.
Heat the remaining olive oil in a skillet over medium heat. Add the finely diced onion and cook for 5–7 minutes, stirring occasionally, until softened.
Add the minced garlic and cook for 30–60 seconds, just until fragrant. Remove the skillet from the heat and allow the mixture to cool slightly.
Combine the breadcrumbs and low-fat milk in a large bowl. Let the mixture stand for 5 minutes so the breadcrumbs absorb the milk.

Bake for 35 minutes. Spread the remaining tomato glaze over the meatloaf, then bake for another 15–25 minutes, or until the center reaches an internal temperature of 74°C (165°F).
Remove the meatloaf from the oven and let it rest for 10 minutes before slicing and serving.
