In a large bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, and 1 teaspoon of salt.
Cut in 1/2 cup of cold butter until the mixture resembles coarse crumbs.
Stir in 3/4 cup of milk until just combined.
Turn the dough out onto a floured surface and knead gently 8-10 times.
Roll or pat the dough to 1-inch thickness and cut with a biscuit cutter.
Place the biscuits on an ungreased baking sheet and bake for 10-12 minutes or until golden brown.
While the biscuits are baking, cook 1 pound of ground chicken in a large skillet over medium heat until no longer pink.
Stir in 1/4 cup of all-purpose flour and cook for 1-2 minutes.
Gradually add 2 cups of milk, stirring constantly until the mixture thickens and bubbles.
Season with 1/2 teaspoon of black pepper.
Serve the chicken gravy over the warm biscuits.
