1Peel and boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
Finely chop the onion.
In a large bowl, mash the boiled potatoes. Add the chopped onion, salt, and black pepper. Mix well to combine.
Add mayonnaise to the potato mixture and mix until smooth and creamy.
In a separate bowl, add the all-purpose flour and a pinch of salt. Gradually add water (about 60 ml) to form a soft, pliable dough.
Divide the dough into small balls (about 6-8 pieces). Roll each ball into a thin circle (about 10 cm diameter) on a lightly floured surface.
Place 2-3 tablespoons of the potato filling in the center of each circle. Fold the dough over the filling to form a pocket and seal the edges by pressing gently.
Heat the vegetable oil in a non-stick pan over medium heat.
Place the potato pockets in the pan and cook for 2-3 minutes on each side, or until golden brown and crisp.
Remove from the pan and serve hot with your favorite dip or chutney.
