Vegetable Stuffed Baked Potatoes
Ingredients
- potatoes4 medium (about 200g each)
- cheese100 g
- mushrooms100 g
- bell pepper100 g
- carrots50 g
- butter1 tbsp (about 14g)
Instructions
- 1
Preheat your oven to 200°C (400°F).
- 2
Wash the potatoes thoroughly and pat them dry. Prick each potato several times with a fork.
- 3
Place the potatoes directly on the oven rack and bake for 50-60 minutes, or until the skins are crisp and the insides are tender.
- 4
While the potatoes are baking, finely chop the mushrooms, bell pepper, and carrots.
- 5
Heat the butter in a skillet over medium heat. Add the chopped mushrooms, bell pepper, and carrots. Sauté for 5-7 minutes until the vegetables are soft. Season with salt and pepper to taste.
- 6
Once the potatoes are baked, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise.
- 7
Carefully scoop out most of the potato flesh into a bowl, leaving a thin layer to keep the skins intact.
- 8
Mash the scooped-out potato flesh and mix it with the sautéed vegetables and half of the cheese.
- 9
Spoon the vegetable and potato mixture back into the potato skins. Sprinkle the remaining cheese on top.
- 10
Place the stuffed potatoes on a baking tray and return them to the oven. Bake for another 10-15 minutes, or until the cheese is melted and golden.
- 11
Remove from the oven and serve hot.
