Meanwhile, bring a large pot of water to a boil. Add the linguine and cook according to the package directions until al dente. Reserve about 150 ml of the pasta cooking water, then drain the linguine.
Melt the remaining 10 g butter in a clean frying pan over medium-high heat. Add the cooled rice in an even layer and cook without stirring for 3–4 minutes. Turn and break it into clusters, then cook for another 3–4 minutes until golden and crispy.
Add the drained linguine to the lamb and mushroom sauce. Toss over medium-low heat for 1–2 minutes, adding a little reserved pasta water if needed to create a glossy sauce.
Tear or grate the mozzarella and fold half of it through the hot linguine. Remove the skillet from the heat, then finely grate or shave 15 g of the black truffle into the pasta and toss gently. Avoid cooking the truffle over high heat, as this can diminish its aroma.
Divide the linguine among serving plates. Top with the remaining mozzarella, crispy rice, reserved lime zest and juice, and the remaining 5 g of freshly shaved black truffle. Serve immediately.
