Rinse the dried pinto beans under cold water and remove any debris.
In a large pot, combine the pinto beans, ham hock, chopped onion, minced garlic, chicken broth, and water.
Bring the mixture to a boil over high heat.
Once boiling, reduce the heat to low and cover the pot. Let it simmer for about 2 to
5 hours, or until the beans are tender.
Stir occasionally and check the water level. Add more water if necessary to keep the beans submerged.
Once the beans are tender, add the salt, black pepper, and cumin. Stir well to combine.
Continue to simmer for an additional 15-20 minutes to allow the flavors to meld.
Remove the ham hock from the pot. If desired, shred the meat from the bone and return it to the pot.
Serve the pinto beans hot, garnished with fresh herbs if desired.
