In a medium saucepan, combine the rice and 4 cups of whole milk.
Bring the mixture to a gentle boil over medium heat, stirring frequently to prevent the rice from sticking to the bottom.
Once boiling, reduce the heat to low and let it simmer uncovered for about 20-25 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
Stir in the sugar and continue to cook for another 5 minutes, stirring constantly.
Remove the saucepan from the heat and stir in the vanilla extract and ground cinnamon.
Let the pudding cool slightly before serving. It will thicken further as it cools.
