1Preheat your oven to 175°C (350°F).
Wash the bell peppers, cut off the tops, and remove the seeds and membranes. Set aside.
Peel and finely chop the onion, garlic, tomato, potato, and carrots.
In a large skillet over medium heat, melt the butter and sauté the onion and garlic until translucent.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula.
Mix in the chopped tomato, potato, and carrots with the beef and cook for another 5 minutes, stirring occasionally.
Season the mixture with salt and pepper to taste.
Stuff the prepared bell peppers with the beef and vegetable mixture, pressing down gently to fill them completely.
Place the stuffed peppers upright in a baking dish and cover with foil.
Bake in the preheated oven for 35-40 minutes, or until the peppers are tender.
Remove the foil and bake for an additional 10 minutes to brown the tops.
Serve the stuffed bell peppers hot, optionally with a side of rice or salad.
