Mexican-Style Beef Meatloaf with Chipotle Glaze, Roasted Paprika Potatoes, and Sautéed Peppers

   In a large bowl, combine 500g ground beef, 1 egg, 50g breadcrumbs, 1 teaspoon cumin, 2 cloves minced garlic, 1 tablespoon chipotle in adobo sauce, and 1 tablespoon chopped cilantro. Mix until just combined.

   Shape the mixture into a loaf and place it on a lined baking tray.

   In a small bowl, mix 1 tablespoon chipotle in adobo sauce, 1 tablespoon tomato paste, and 1 tablespoon brown sugar to make the glaze. Spread the glaze evenly over the meatloaf.

   Bake the meatloaf in the preheated oven for 30-35 minutes, or until cooked through.

   While the meatloaf bakes, cut 400g potatoes into bite-sized cubes. Toss with 1 tablespoon olive oil, 1 teaspoon smoked paprika, salt, and pepper.
