Preheat your oven to 200°C (390°F).
Cut the chicken breast into small bite-sized pieces.
In a bowl, combine the chicken pieces with 1 tbsp vegetable oil, salt, turmeric, cumin powder, paprika, garam masala, and tandoori masala. Mix well to coat the chicken evenly.
Heat the remaining 1 tbsp vegetable oil in a skillet over medium heat. Add the chopped onion and sauté for 2-3 minutes until translucent.
Add the marinated chicken to the skillet and cook for 6-8 minutes, stirring occasionally, until the chicken is cooked through and slightly browned.
Add the butter to the skillet and stir until melted and the chicken is coated in a buttery sauce. Remove from heat.
Slice the baguettes in half lengthwise to create four open-faced pieces. Place them on a baking tray lined with parchment paper.
Spread 1 tbsp of tomato sauce on each baguette half.
Evenly distribute the cooked butter chicken over the baguette halves.
Top with sliced mixed bell peppers and sprinkle shredded mozzarella cheese over each piece.
Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly and the baguette edges are golden.
Remove from the oven, let cool slightly, slice, and serve warm.
