In a large bowl, combine the ground turkey, egg, minced chipotle in adobo, cumin, minced garlic, and 1 tablespoon of chopped fresh cilantro. Mix until just combined.
Shape the turkey mixture into a loaf and place it on a lined baking sheet or in a loaf pan.
Roast the meatloaf in the oven for 30-35 minutes, or until the internal temperature reaches 74°C (165°F).
While the meatloaf is baking, cut the potatoes into 2 cm cubes. Toss them with half of the olive oil, salt, and pepper to taste. Spread them on a baking tray and roast in the oven for 25-30 minutes, turning halfway through, until golden and crispy.
Slice the red and green bell peppers into strips.
Heat the remaining olive oil in a skillet over medium-high heat. Add the bell peppers and sauté for 5-7 minutes, until softened and slightly charred.
Once everything is cooked, slice the meatloaf and serve with the roasted potatoes and sautéed peppers. Garnish with the remaining chopped cilantro.
