Roll the dough out again into a rectangle, then fold it into thirds like a letter. Repeat this process two more times, chilling the dough for 30 minutes between each fold.
Preheat your oven to 375°F (190°C).
Roll the dough out one final time and cut it into triangles.
Place a few dark chocolate chips at the base of each triangle and roll them up towards the tip to form a croissant shape.
Place the croissants on a baking sheet lined with parchment paper and let them rise for about 20 minutes.
Bake the croissants in the preheated oven for 15-20 minutes or until they are golden brown.
Remove from the oven and let them cool slightly before serving. Enjoy your classic chocolate croissants!
