Add the tender octopus and cooked garlic mushrooms to the tomato sauce. Simmer for 3–4 minutes to combine the flavors.
Reduce the heat to low and add the drained linguine. Toss thoroughly, adding reserved pasta water a little at a time until the sauce evenly coats the pasta.
Gradually add the grated halal-certified cheddar, tossing continuously until melted into a smooth, creamy sauce. Keep the heat low to prevent the cheese from separating.
Cut the limes and squeeze in juice to taste, tossing the pasta after each addition. Remove the skillet from the heat once the dish tastes bright and balanced.
Serve immediately, distributing the octopus, garlic mushrooms, spicy tomato sauce, and cheddar-coated linguine evenly among the portions.
