Add the chopped tomatoes, chilli flakes, and salt. Cook for 6–8 minutes, stirring occasionally, until the tomatoes soften and the excess liquid begins to evaporate.
Add the tomato sauce and grated coconut. Cook for another 3–4 minutes, stirring frequently, until well combined and creamy.
Add the drained rice and gently stir for 1–2 minutes so that every grain is coated with the tomato-coconut mixture.
Pour in the water and stir once. Bring the mixture to a boil over medium-high heat.
Reduce the heat to low, cover the pot tightly, and cook for 15–18 minutes, or until the rice is tender and the liquid has been absorbed.
Turn off the heat and leave the rice covered for 10 minutes. Fluff it gently with a fork.
Fold in the toasted dry fruits and most of the chopped coriander leaves. Garnish with the remaining coriander and serve warm.
