Bring a large pot of water to a boil. Add the spaghetti and cook according to the package directions until al dente.
Before draining the spaghetti, reserve about 250 ml of the pasta cooking water. Drain the spaghetti and set it aside.
While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the diced onion and cook for 5–7 minutes, stirring occasionally, until soft and translucent.

Pour the sauce back into the skillet and warm it over medium-low heat. Add the fresh spinach and cook for 2–3 minutes, stirring, until wilted.
Add the drained spaghetti to the skillet and toss until evenly coated. Gradually mix in enough reserved pasta water to create a smooth sauce that clings to the pasta.
Stir in most of the grated Parmesan and cook for 1 minute. Remove the skillet from the heat.
Divide the pasta among serving dishes, garnish with the remaining Parmesan, and serve immediately.
