Rinse the toor dal thoroughly and cook it in a pressure cooker with 2 cups of water until soft and mushy.
Cut the drumsticks into 2-inch pieces and the brinjals into cubes.
In a pan, heat the oil and add mustard seeds. Once they splutter, add curry leaves and chopped onion. Sauté until the onion turns translucent.
Add the drumsticks and brinjals to the pan and sauté for a few minutes.
Add the sambar powder, turmeric powder, and salt. Mix well.
Add the cooked toor dal to the pan along with 2 more cups of water. Stir well.
Add the tamarind paste and let the sambar simmer for about 10-15 minutes until the vegetables are cooked and the flavors are well combined.
Adjust the consistency of the sambar by adding more water if needed.
Garnish with chopped coriander leaves before serving.
Serve hot with rice or idli.
